## About us

Restaurant Story is Tom Sellers' flagship restaurant and home, where Tom tells his story and the story of
British food through an ever-evolving tasting menu of seasonal dishes.

The restaurant has been garlanded with numerous accolades and awards over the years, including gaining its
first Michelin star after five months of opening in 2013, five AA rosettes in 2016 and a much coveted second
Michelin star in 2021.

Restaurant Story is set over two floors with an intimate ground floor dining room of just ten tables, a stunning
private dining room complete with its own kitchen on the first floor, alongside a lounge and terrace which
boasts stunning views of The Shard.

## About us

Story Cellar opened to much critical acclaim in 2023. Inspired by the rotisseries and brasseries of Paris and
situated in the heart of historic Covent Garden, Story Cellar combines charcoal cooking and classic dishes with
an exceptional wine programme.

The restaurant features large counter-style seating at street-level, with window tables facing out onto the
hustle and bustle of Neal’s Yard. Downstairs, there are a handful of tables nestled beside the walk-in wine
cellar, where this room also doubles as an intimate private dining space.

## About Us

Tom Sellers launched Once Upon A Time in 2020. Once Upon A Time provides a complete solution to event catering, with a service that illustrates the passion that the team have for hospitality and the industry as a whole.

The ethos is simple; ingredient-led cooking with menus designed by one of the UK’s leading chefs, Tom Sellers. Working with a group of trusted suppliers to create events that operate effectively with unrivalled quality and delivery.

Once Upon a time offers clients the chance to create their own narrative, to tell their story through food. The team have created beautiful, bespoke events across the globe. 

Additionally the events team currently have a service contract with Tottenham Hotspur Football club, supplying a bespoke fine dining experience to all guests in the Chairman's Suite at all Spurs home games as well as NFL, Boxing and concerts at the stadium.

Ongoing F&B services are currently provided to Bang & Olufsen, Maddox Gallery and long term partner Rolls Royce.

## About Us

Originally founded by Ben Lines in 2020 Gwyn’s Bakery became part of HiStory Hospitality in 2025.

Based in the Sussex market town of Horsham, Gwyn’s is an artisan bakery known for its exceptional sourdough breads and pastries, while it’s cinnamon buns, inspired by both American and Swedish styles and made over a 48-hour process have become the bakery’s signature.

All products are made from scratch daily, using quality British ingredients such as Wessex Mill flour, Pump Street Chocolate, and coffee from Horsham Coffee Roasters.

Sustainability and community are central to Gwyn’s ethos: surplus stock is donated to local food banks, and leftover ingredients are creatively reused. With its commitment to quality, transparency, and a sense of local pride, Gwyn’s Bakery is a must-visit destination in the heart of Horsham.

We were immensely proud to acquire the bakery. A beloved local institution, Gwyn’s will continue to serve the community as it always has, while also expanding its reach by supplying artisan bread to HiStory Hospitality’s London restaurants: the two Michelin-starred Restaurant Story, Story Cellar, and Dovetale.

As we grow and evolve, our commitment to Gwyn’s founding values and to the community it serves remains stronger than ever.
