Originally founded by Ben Lines in 2020 Gwyn’s Bakery became part of HiStory Hospitality in 2025.
Based in the Sussex market town of Horsham, Gwyn’s is an artisan bakery known for its exceptional sourdough breads and pastries, while it’s cinnamon buns, inspired by both American and Swedish styles and made over a 48-hour process have become the bakery’s signature.
All products are made from scratch daily, using quality British ingredients such as Wessex Mill flour, Pump Street Chocolate, and coffee from Horsham Coffee Roasters.
Sustainability and community are central to Gwyn’s ethos: surplus stock is donated to local food banks, and leftover ingredients are creatively reused. With its commitment to quality, transparency, and a sense of local pride, Gwyn’s Bakery is a must-visit destination in the heart of Horsham.
We were immensely proud to acquire the bakery. A beloved local institution, Gwyn’s will continue to serve the community as it always has, while also expanding its reach by supplying artisan bread to HiStory Hospitality’s London restaurants: the two Michelin-starred Restaurant Story, Story Cellar, and Dovetale.
