HiStory Hospitality are seeking a passionate Commis Chef to join the opening team of a new kitchen set within a stunning country estate in Buckinghamshire.


This is an exciting opportunity to be part of a launch team, working in a premium countryside environment with a strong focus on seasonality, produce-led cooking and exceptional standards of execution. You’ll work alongside an experienced brigade in a kitchen committed to developing talent and delivering outstanding hospitality.


Commis Chef Requirements

  • A motivated Commis Chef looking to develop their career within a high-quality professional kitchen.
  • A strong interest in classical and modern cooking techniques, with a desire to learn and refine your skills.
  • Passion for seasonal British produce and countryside-inspired cooking.
  • Ability to support senior chefs with prep, mise en place and service while maintaining high standards.
  • Strong understanding of food safety, hygiene and HACCP standards.
  • Good organisation and time management skills to assist in both preparation and service.
  • Ability to remain calm and focused during busy services.
  • A positive attitude and collaborative mindset, contributing to a strong kitchen culture from day one.
  • Flexibility to work evenings, weekends and holidays as required.
  • A genuine desire to learn, grow and progress within a high-performing kitchen.

About HiStory Hospitality


The project is led by Tom Sellers, one of the UK’s most respected chefs. Hailing from Nottingham, Tom opened his first restaurant, Restaurant Story, at just 26 years old. The restaurant quickly gained critical acclaim, earning a Michelin star within five months, followed by a second star in 2021.


Tom trained with some of the world’s most influential chefs, including Tom Aikens in London, Thomas Keller at three Michelin-starred Per Se in New York, and René Redzepi at two Michelin-starred Noma in Copenhagen.


More recently, the group opened Story Cellar, a Parisian-inspired rotisserie restaurant, followed by Dovetale at 1 Hotel Mayfair, which offers a produce-led menu of reimagined European classics alongside dishes cooked over the grill and an abundant raw bar.
