HiStory Hospitality are seeking a talented and dependable Night Chef to join the kitchen team within a prestigious luxury hospitality environment. Working overnight, you will be responsible for delivering exceptional food for late-night dining, overnight room service, and early breakfast preparation, while ensuring the kitchen is fully organised and ready for the morning team.
Night Chef Requirements
- Previous experience as a Chef de Partie, Senior Chef de Partie, or Night Chef within a luxury hotel, fine dining restaurant, or high-end hospitality environment
- Confident working independently during overnight shifts while maintaining exceptional food quality and consistency
- Experience preparing late-night room service, overnight dining, and breakfast mise en place to the highest standards
- A passion for premium ingredients and delivering outstanding food across every service
- Strong organisational skills with the ability to prioritise workload and manage multiple tasks throughout the night
- Experience in stock management, food preparation, food cost control, and maintaining accurate records
- Excellent understanding of food safety, hygiene standards, and kitchen health & safety procedures
- Highly reliable, self-motivated, and proactive, with the ability to work calmly under minimal supervision
- Confident in maintaining kitchen cleanliness, completing overnight preparation, and ensuring a seamless handover to the day team
- Excellent communication skills and a collaborative approach to working with both kitchen and front-of-house colleagues

Tom Sellers
Hailing from Nottingham, Tom Sellers is a two Michelin-starred chef who opened his first restaurant, Restaurant Story, at just 26. His distinctive approach earned a Michelin star within five months of opening, followed by a second star in 2021.
Tom trained with some of the world's most influential chefs, including Tom Aikens in London, Thomas Keller at the three Michelin-starred Per Se, and René Redzepi at the two Michelin-starred Noma—all before the age of 21.
More recently, Tom opened Story Cellar, a Parisian-inspired rotisserie restaurant, followed by Dovetale at 1 Hotel Mayfair, offering a sustainably driven, produce-led menu of reimagined European classics.
