Fish Butcher Requirements
- Previous experience as a Fish Butcher or in a similar role within a high-quality restaurant, fishmonger or luxury hospitality environment
- Exceptional knife skills with the ability to prepare, fillet, portion and trim a wide variety of whole fish and shellfish to the highest standards
- Strong knowledge of seasonal British seafood, sustainable sourcing and responsible handling practices
- Experience maintaining exceptional product quality through careful storage, preparation and stock rotation
- Highly organised with the ability to manage daily fish preparation to support a busy, high-performing kitchen
- Excellent understanding of food safety, hygiene and HACCP procedures
- Meticulous attention to detail, ensuring maximum yield and minimal waste
- Calm, reliable and able to perform under pressure while maintaining consistently high standards
- Passionate about working with some of Cornwall's finest seafood and contributing to an exceptional dining experience
Tom Sellers
Hailing from Nottingham, Tom Sellers is a two Michelin-starred Chef who opened his first restaurant, Restaurant Story, at the age of 26. His unique approach earned a Michelin Star just five months after opening, with a second following in 2021.
Tom trained under some of the world's most influential chefs, including Tom Aikens in London, Thomas Keller at three Michelin-starred Per Se in New York, and René Redzepi at two Michelin-starred Noma in Copenhagen, all before the age of 21.
Story Cellar, a Parisian-inspired rotisserie, opened in 2023 to widespread acclaim, followed by Dovetale at 1 Hotel Mayfair, where sustainably sourced, produce-led European classics are cooked over the grill and showcased alongside an abundant raw bar.
