HiStory Hospitality are seeking an exceptional Breakfast Manager to join the opening team of a new dining destination within a stunning country estate in Buckinghamshire.


This is a unique opportunity to be part of a launch team, working in a premium countryside environment where service, organisation and guest experience are at the heart of the operation. The Breakfast Manager will play a key role in shaping the morning offering, delivering a refined yet relaxed start to the guest experience.


Breakfast Manager Requirements

  • An experienced and motivated hospitality professional with a strong background in restaurant or hotel breakfast service.
  • Confident leading a team during busy breakfast periods, ensuring smooth and efficient service from opening through to transition into daytime operations.
  • Strong understanding of high-quality food and beverage service, with attention to detail and consistency.
  • Ability to create a warm, welcoming and professional atmosphere for guests at the start of their day.
  • Excellent organisational and communication skills, with the ability to manage reservations, staffing and service flow effectively.
  • Experience training, motivating and supporting front-of-house team members to maintain exceptional service standards.
  • Calm and composed under pressure, with the ability to adapt quickly during high-volume service periods.
  • Strong knowledge and implementation of food safety, hygiene and health & safety standards.
  • A collaborative mindset, working closely with kitchen and wider food and beverage teams to ensure a seamless guest experience.
  • Flexibility to work early mornings, weekends and holidays as required.
  • A genuine passion for hospitality and delivering memorable guest experiences.
  • Warm, humble and professional approach to leadership and service.

Tom Sellers

Hailing from Nottingham, Tom Sellers is a two Michelin-starred Chef who opened his first restaurant, Restaurant Story, at 26. At launch, Tom’s unique approach garnered significant critical acclaim, being awarded a Michelin Star just five months after opening, with a second star following in 2021.


Tom learned his craft from some of the world’s most influential chefs and spent time working alongside the likes of Tom Aikens in London, Thomas Keller at three Michelin-starred Per Se in New York, and René Redzepi at two Michelin-starred Noma in Copenhagen, all before the age of 21.


Story Cellar, a Parisian-inspired rotisserie-style restaurant, opened in 2023 to much critical acclaim, followed by Dovetale at 1 Hotel Mayfair, where the restaurant offers a sustainably minded, produce-led à la carte menu of reimagined European classics, bolstered by dishes cooked over the grill and an abundant raw bar.
